Yum yum yum!
I think it’s safe to say we all love cupcakes. They’ve become a sort of trend of their own in the past year or so, with bakeries like the Hummingbird Bakery and Primrose Bakery making us drool at the thought of their gorgeous little cupcakes.
Since it was my mum’s birthday and my finances weren’t looking too good, I decided to make her some yummy cupcakes. I’m not much of a baker, which is why I went for Betty Crocker’s chocolate fudge cupcake mix. I love her cakes, they always turn out delicious. Next time I will definitely be making my own mix though, since the preparation is half the fun (bowl licking anyone?).
I completely forgot to take pictures of the mixing process, but here is after we had put the mixture into the baking tray and into the oven. Not a smidgen of mixture left in the bowl, woops!
They rose in the oven quite fast, only took about 20minutes to bake properly.
Don’t they look delicious already? There were some white chocolate chips in the box, but we decided to sprinkle them into the mixture instead of using them to decorate.
Excuse the horrendous frosting, it proved quite difficult to spread onto the cupcakes without looking like this! We used Betty Crocker’s ready made frosting, which was vanilla flavoured. Highly recommend it to cake lovers!
My boyfriend took charge of icing the letters. We went for ‘Happy Bday Mum’ because we didn’t have enough cake mixture for the extra letters in ‘birthday’. Oh well!
Voila! The finished cupcakes! I added some sugar bobbles around the edges for decoration (look cute but are actually very very hard when you try and bite into them!).
Left on the dining table for when my mum came back from work. Card, cupcakes, and flowers of course! Family are always difficult to buy for I find, but I really enjoyed giving these presents because they were very simple, budget-friendly and most importantly they had a bit more thought behind them.
